Our Constantinos has prepared a special Christmas recipe for you, which gives the typical Tyrolean Christmas pastry a Mediterranean touch:
Real Tyrolean Vanillekipferln with a touch of the South.
In Tyrol, the aroma of cloves is used especially during the Christmas season for cookies, mulled wine and red cabbage. In Greek cuisine, cloves are used throughout the year, so it is no wonder that Constantinos decided to use this slightly woody, spicy aroma for Vanillekipferln as well.

🎄 VANILLEKIPFERL . INGREDIENTS 🎄
- ¼ kg cold butter
- 120 g powdered sugar
- 100 g ground almonds
- 300 g smooth wheat flour
- The Mediterranean touch: freshly grated cloves
- Powdered sugar & pulp of a vanilla bean for sprinkling
🎄 HOW IT’S DONE: 🎄
- To prepare the Tyrolean Vanillekipferln, mix the flour and ground almonds, as well as the powdered sugar, on a wooden board. Then add some freshly grated cloves. But be careful!
Since the aroma of cloves is very intense, be sure to use it sparingly so that the vanilla flavor is not overshadowed too much. - Then prepare a shortcrust pastry. To do this, work in the cold butter and then cover the dough with cling film so that it does not absorb any odors from the refrigerator.
While the dough rests in the refrigerator for at least 90 minutes, line two baking sheets with baking paper and preheat the oven to 170 °C (top & bottom heat). - After the resting time, place ¼ of the dough on a lightly floured wooden board and knead it a little with the ball of your hand. However, be careful not to knead the dough for too long, as it may become too warm and sticky.
- Roll the dough into a long roll with the flat of your hand and cut it into equal pieces. Take each piece from the wooden board, place it on the baking sheet and shape it into the typical crescent shape. This way the shape of the Vanillekipferln is preserved.
Finally, bake the Kipferln for 9 minutes until they have taken on a slightly brownish color. - Finally, sprinkle the Vanillekipferln with the prepared vanilla sugar and place them in a resealable cookie tin.
Process the rest of the dough in the same way.
