The history of Kaiserschmarren – an imperial delight:
Kaiserschmarren, a light and airy, shredded pancake, lovingly dusted with powdered sugar and traditionally served with a hearty plum compote, is more than just a dessert; it is a feast for the senses. It owes its name to Emperor Franz Joseph I, who was known for his fondness for this specialty.
An imperial origin story
According to legend, the Kaiserschmarren was created by a delicious mishap. When the Palatschinken for the Emperor failed and broke when turned, the cook cleverly improvised: he cut the dough further, sprinkled powdered sugar over it and served the new creation to the Emperor, who enthusiastically asked: “Tell me, what kind of Schmarr’n is this?” The quick-witted servant immediately replied: “Majesty, this is a Kaiserschmarrn!” … and quickly this “Kaiserschmarrn” became one of Austria’s most popular desserts.
Make Kaiserschmarren yourself – the best recipe:
In our hotel, we are proud to serve you authentic Tyrolean cuisine, including our homemade Kaiserschmarren, which we serve in our in-house restaurant.
Here is the recipe so that you can also cook this imperial delight at home:
1. Kaiserschmarren – Ingredients:
- 4 eggs, separated
- 200 ml milk
- 125 g flour
- 30 g sugar or birch sugar
- 1 packet of vanilla sugar
- A pinch of salt
- Butter for baking
- Powdered sugar for dusting
- Lingonberries, plum compote or applesauce for serving
2. Kaiserschmarren – Preparation:
- Place the egg yolks in a bowl and stir with milk, sugar, vanilla sugar and salt.
- Beat the egg whites until stiff and carefully fold into the egg yolk mixture alternately with the flour.
- Bake the dough golden brown in a hot pan with butter. First on level 8. After turning, reduce to level 4 and put a lid on the pan. This is how the dough rises really nicely.
- As soon as the underside of the dough also has a golden brown color, you have to “shred” the Kaiserschmarren.
- Dust with powdered sugar and serve together with lingonberries, plum compote or applesauce.
