It’s almost that time again! The gates of the popular strawberry land will open again and lure you in with fresh, ripe, and deep-red strawberries.
Especially for this special time of year, we have put together an exceptionally delicious recipe for you that you can prepare with delicious strawberries and freshly harvested rhubarb.
The cake is quick and easy to prepare and is enough for around 15 servings.

Ingredients:
Dough:
- 4 eggs
- 225 g sugar
- ¼ kg butter
- ¼ kg flour
- ½ packet baking powder
- 1 pinch of salt
- 2 tsp zest of untreated lemons
- Baking paper for the baking sheet
Streusel:
- 200 g butter
- 150 g flour
- 100 g ground almonds
- 150 g sugar
- 1 pinch of salt
Fruits:
- ¼ kg strawberries
- ¾ kg rhubarb
Preparation:
Preparation of the dough:
Preheat the oven to 180° and line the baking sheet with baking paper. Then beat the butter and sugar together with the eggs until frothy. Then add the flour, salt, baking powder, as well as the lemon zest and stir this into the mixture. Finally, spread the dough evenly on the baking sheet and start with the further steps.
Preparation of the streusel:
Also, melt the butter in a saucepan for the topping (if you are in a hurry, you can also do this in the microwave, for example). Furthermore, mix sugar, flour, almonds, and salt in a bowl and knead the mixture into streusel with your previously chilled hands.
Incorporating the fruit:
Wash the rhubarb thoroughly, cut off the ends and peel it with a potato peeler. Since the rhubarb splatters terribly and stains everything the juice comes into contact with, protect yourself with an apron. Also, wash the fresh strawberries and chop them.
Finally, spread the fruit loosely over the dough. Depending on your preference, you can also use more strawberries, for example.
Furthermore, cover the fruit with the streusel and finally bake the cake in the preheated oven for about 35-40 minutes.
