Strawberry Cupcake Recipe

Finally, the time has come to harvest the first ripe fruits in the garden!
A particularly popular treat for young and old is the strawberry! The juicy, aromatic red berry is best enjoyed immediately, but is also very popular as jam or as a cake topping. The strawberry, botanically actually an aggregate nut fruit, is rich in vitamin C and minerals and has hardly any calories on top of that.

 

Did you know that people were already eating wild strawberries in the Stone Age?

The ancient writers Virgil and Ovid praised the aroma of the wonderful fruits in ancient Rome. And strawberries were also popular in the Middle Ages. They were even grown in large fields. Even if strawberries are available all year round these days: What fruit could be better as a symbol for the approaching summer?

 

We at Hotel Hintertux Tux would like to present you with a recipe for particularly delicious strawberry cupcakes today – perhaps an idea for the next coffee party on a warm early summer afternoon in the garden or on the balcony?

 

List of ingredients for 12-14 pieces:

For the dough:

150 g flour
1 ¼ tsp baking powder
½ tsp baking soda
1 pinch of salt

2 eggs
170 g sugar
2 tsp vanilla extract
120 ml neutral-tasting oil (e.g. sunflower oil or rapeseed oil)
120 ml buttermilk

For the cream:

200 g curd cheese
200 g cream cheese
2 tbsp strawberry jam
200 ml whipped cream

For the filling:

Strawberry jam

 

Here’s how it’s done:

A little tip in advance: Take all the ingredients out of the refrigerator in good time – processing is easier when they are at room temperature!

  • Preheat the oven to 175 degrees Celsius with top and bottom heat.
  • Mix the dry ingredients and sift into a bowl. Mix the eggs with the food processor for a few seconds, then add sugar and mix the mixture vigorously for about half a minute. Set the speed to medium and incorporate vanilla extract and oil.
  • Now add the buttermilk and flour mixture alternately on a low setting. For the best result, please only fold in small amounts and stir only briefly until the ingredients are just combined!
  • Now fill the rather liquid dough up to half into the molds and bake for about 17 minutes.
  • For the cream, mix curd cheese, cream cheese and strawberry jam and fold in the whipped cream. Now fill the mixture into a piping bag with a star nozzle and chill in the refrigerator.
  • Use a sharp knife to cut a small notch in the cooled cupcakes and fill each with 1 tbsp of strawberry jam. Now take the piping bag out of the refrigerator and start decorating the cakes. The cupcakes look particularly pretty if you put a small strawberry on top and sprinkle a few chocolate sprinkles over them. Let your creativity run wild!
