From the kitchen of our mountain hotel in Hintertux, straight from the heart of the idyllic alpine landscape of the Zillertal, today we present you with an enchanting recipe that captures the essence of early summer: Our strawberry quark dumplings.
This sweet temptation is a tribute to the strawberry season, which is now in full splendor and enchants us with its seductively sweet aroma.
The secret of the strawberry
Not just a culinary delight, but also a true superfood: the strawberry. With its bright red color, it is not only an eye-catcher, but also rich in vitamins and minerals and delightfully low in calories.
Vitamin-rich superfood
Strawberries are an excellent source of vitamin C – a serving of about 150 grams already covers over 150% of the daily requirement of an adult. This vitamin plays an essential role in the immune system, skin health and collagen formation.
In addition to vitamin C, strawberries also contain significant amounts of manganese, a mineral that is important for bone health and enzymatic processes in the body. They are also rich in folic acid.
Antioxidant and anti-inflammatory
Strawberries also contain a variety of antioxidant compounds. These substances help to neutralize free radicals in the body that can cause cell damage and disease. The bright red color of strawberries is mainly due to the anthocyanins, which not only offer antioxidant benefits, but also have an anti-inflammatory effect.

Strawberry compote:
The heart of this recipe is the seductively sweet strawberry compote, prepared from fresh strawberries, simmered with a pinch of sugar and a hint of lemon zest. Whether served warm or cold, it is the perfect accompaniment to the fluffy quark dumplings.
Strawberry quark dumplings – all ingredients:
- 3 eggs
- 500 g quark
- 170 g breadcrumbs
- 20 g margarine
- Vanilla bean to taste
- Zest and juice of one lemon
- 60 g sugar
Strawberry quark dumplings – your preparation:
- Whisk the eggs, sugar and margarine until frothy, then fold in the quark, breadcrumbs, vanilla and lemon and process to a smooth mass.
- Chill the mixture for about 30-35 minutes. Then form small dumplings.
You are also welcome to take a strawberry and fold the dough around the mass to form sweet strawberry dumplings. It is important that the strawberry is completely covered by the dough, otherwise the dough will detach from the strawberry during the cooking step. - Gently simmer the dumplings in lightly sweetened water for about 15 minutes until they float to the surface of the water.
- After cooking, turn the dumplings in browned buttered breadcrumbs.
- Arrange with the strawberry compote and garnish with powdered sugar, fresh mint leaves, strawberries or chocolate decor as desired.
Our Kössler secret tip:
Refine the breadcrumbs with grated nuts for an additional, nutty flavor dimension. Hazelnuts, almonds and walnuts are particularly good!
