To match the season, we have a delicious recipe for you with the popular Hokkaido pumpkin. Our pumpkin cream soup is very easy and quick to prepare and tastes delicious!
It is important to ensure that the right pumpkin is used. We recommend our favorite pumpkin – the Hokkaido.
The recipe is designed for 4 people.

Ingredients:
1 large Hokkaido (or another pumpkin of your choice – butternut squash is also very suitable)
a little butter for frying
5 tbsp raw cane sugar
250 ml vegetable soup
125 ml whipped cream
Salt & pepper to taste
briefly roasted pumpkin seeds (amount as desired)
If available: pumpkin seed oil
Preparation:
Halve the pumpkin, peel it, remove the seeds with a large spoon and scrape it clean.
Then dice the pumpkin, heat some butter in a large saucepan and add the diced pumpkin pieces.
Fry everything for about 10 minutes, stirring constantly – this gives a delicious, sweet taste. Now add the raw cane sugar and let it caramelize.
Pour the vegetable soup over the fried pumpkin pieces and simmer the soup, covered, until the pieces are soft.
Finally, purée the pumpkin with a hand blender, add the whipped cream and season with salt and pepper. Serve the soup hot and garnish with roasted pumpkin seeds and pumpkin seed oil.
